I adapted: fried in pan for 10 min but then put on roasting tray in oven for 35 min. Used purple potatoes. Didn't use any additional sauces but instead marinated tempe for half a day (in soy, sesame oil, lime juice, maple and sambal) and while the veggies were in the oven fried the tempe with the lotus and scallions, then when the veggies were done added them in the pan.
