  • 1 teaspoon vegetable oil
  • 16 pork sausages
  • 1 red onion (cut into thick wedges)
  • 1 red pepper (seeded and thickly sliced)
  • 2 apples (small red-skinned, unpeeled, cored and quartered)
  • 2 cloves garlic (thinly sliced)
  • 8 stems thyme (plus additional to serve)
  • 1/4 cup maple syrup
  • 8 ounces green beans

    Directions

    1. Preheat the oven to 450°F. Heat oil in a flame-proof roasting pan on high heat. Add sausages; cook and turn for 2 mins or until browned. Add onion, pepper, apples, garlic and thyme; stir to combine.
    2. Bake for 10 mins. Drizzle with maple syrup. Bake 3 mins longer or until sausages are cooked through.
    3. Meanwhile, place beans in a bowl. Cover with boiling water. Let stand for 5 mins or until just tender. Drain. Serve sausages with beans.
