- 1 butternut squash (peeled, seeds scooped out, and cut into 1/2 inch cubes, 4-5 cups, and depending on the size of your butternut squash you may have left-overs)
- 2 tsp. chili powder
- 1/4 cup water
- 284 mL enchilada sauce (can of, Canadians: I found mine at Co-op)
- 1 cup shredded cheese
- 1 cup pulled pork (maple)
- 4 flour tortillas (12- inch)
