  • 1 tablespoon raw cane sugar
  • 100 grams crème fraîche (1/3 cup + 1 tablespoon, or heavy cream)
  • 3 egg yolks
  • 80 milliliters maple syrup (the darker the better)
  • 1 sea salt (good pinch)
  • 75 grams pecans (coarsely chopped)
