Beautiful, I had to stray, ever so slightly, from the recipe . I used one(1) med. yellow onion in place of four(4) shellots, and I used molasses instead of maple syrup. Beings This was my introduction to this recipe, so I have not chanced to enjoy the shellot and maple version, but the onion and molasses was off the chain. The flavor surprised me, I have only been cooking barely three months (56 yrs. old) and did not think I had that abilty.The meat was so tender and tasty I still can't believe I made it.
