First off, I will say that I have never cooked sweet potatoes in any capacity.
I did not really expect such a large volume of food, and I did not really have a skillet large enough to fit 3 potatoes plus 3 apples. Maybe the produce I selected was larger than the author intended? I tried a large skillet, and then transferred it to my non-stick wok in hopes that would help me stir without spilling. It completely filled my wok to the brim.
I would like to try this again, but I will probably par-boil the sweet potatoes. There was no information about how long they take to cook on the stovetop, and without any experience, I had difficulty determining how tender they should be before proceeding to the next step.
I added my apples and maple syrup too soon, and everything else started burning and the potatoes were still crunchy. I did think that it tasted great, I just need to tweak the cook on the sweet potato next time.
