- 1 cup maple syrup (good quality)
- 1/3 cup brown sugar
- 1 head garlic (1/4 inch cut off from the top)
- 1/2 cup salt
- 2 Tbsp. whole black peppercorns (slightly crushed)

Very good results! Turkey was tender juicy and sweet. Wife described as a crisp taste almost a hint of vinegar on the finish. I did add some maple flavored rum from Five Saints Distillery with the Maple Syrup for the brine mixture.
