I was nervous because of the balsamic, but this was delicious! My chicken breasts were so big I had to cook them one at a time, but they didn’t dry out, and the marinade coated beautifully. It left a black “skin” on them that had me worried I’d burned them, but no, just a layer of flavor. I served with sweet potato mash and spinach. Will definitely add this to the rotation.

This dish is so simple to make and tastes delicious. Family loved it!
Would definitely make again. I cooked some mash on the side with a bocconcini, rocket and semi sundried tomato salad.
