  • 4 tablespoons vegetable shortening (very cold)
  • 1/4 teaspoon salt
  • 1 teaspoon sugar
  • cold water (Ice-, to mix)
  • 2 cups mango (Alphonso, pulp, use canned or fresh)
  • 1 cup extra firm tofu
  • 1/2 cup soymilk
  • 1/2 cup sugar (you may want to use more if you use fresh mango pulp, less if you use canned. I'd advise tasting as you mix)
  • 1/2 teaspoon cardamom seeds (powdered, use the green, not brown, kind)
  • 1/2 cup vegan cream cheese (if you can't find this, substitute with the same amount of extra-firm tofu)
  • 1/2 teaspoon salt
