Wow! This was great. We were having island pork tenderloin and had this as the side. I didn't have coconut milk, but used chicken stock with no added salt instead. It was terrific with the spices of the pork. Jasmine is the perfect rice for an island dinner. I'm glad I didn't use the coconut milk, that would have added a lot of calories. I have made it that way before and I liked that too, but this time I didn't miss the calories.
