- 1 red onion (medium, diced into ¼-inch pieces)
- 1 jalapeño (stemmed and minced, I left the seeds in for spice)
- 1/2 Tbsp. fresh ginger (peeled and minced)
- 1 Tbsp. samba oelek (or other hot pepper sauce)
- 2 Tbsp. fresh lime juice

- 2 lb. boneless, skinless chicken breasts (or thighs, cut into 1-inch pieces)
- 1 Tbsp. sesame oil (Asian)
- 1 Tbsp. cornstarch (use a brand like Argo or Bob's Red Mill for gluten-free)
- 2 Tbsp. soy sauce (or tamari for gluten-free)
- 1 lb. snap peas (ends trimmed if needed)
- 2 Tbsp. canola oil (or grapeseed)
- 2 cups mango salsa (Spicy)
- 2 Tbsp. honey
