- 2 mangoes (medium firm)
- 1/2 cup fresh coriander (chopped)
- 1/2 parsley
- 2 inches fresh ginger
- 2 cups bulghur
- 3 cups water (to cook bulgur, OR as per the cooking instructions of your brand)
- 1 lime juice

- 1/4 cup mango juice (fresh)
- marinade (from mangoes)
- 1 tsp. Dijon mustard
- 1 lime juice (extra, if needed)
- 1/2 cup canola oil

- 1 English cucumber (diced, part of salad)
- 1 cup chickpeas (cooked, part of salad)
- coriander leaves (for decoration)
