Description
Malai Kofta is a classic vegetarian Indian dish, tracing its origins to the northern regions of India. Malai Kofta traditionally features fried dumplings in a creamy tomato gravy. This recipe for Malai Kofta uses potatoes as the basis of the dumplings adding in paneer cheese, cashews, raisins, chili peppers, and traditional Indian spices. Dipped in an egg and bread crumb mixture, the dumplings are fried until golden. Garam masala and tomatoes form the basis of the gravy to which is added all sorts of spices for a spicy sauce that pairs beautifully with the Koftas. Serve the Koftas on top of the gravy and garnish with cilantro, sliced almonds, and cream.
Ingredients
- 800 grams potatoes (peeled and quartered)
- 2 Tbsp. paneer cheese (or Haloumi cheese or mozzarella cheese)
- 1 Tbsp. cashews (crushed)
- 1 Tbsp. raisins
- 3 green chili peppers (2 or ,diced)
- 1/2 Tbsp. sugar
- 1 Tbsp. ground cumin
- 1 Tbsp. ground coriander
- 1 Tbsp. chili powder
- 2 cardamom pods (The seeds of)
- flour (for coating)
- breadcrumbs
- 2 eggs (beaten)
- vegetable oil (for frying.)
- 1 onion (minced)
- 3 garlic cloves (minced)
- 1 tsp. ground ginger
- 1 Tbsp. poppy seeds (crushed in the mortar.)
- 1 Tbsp. cashews (or peanuts)
- 500 mL crushed tomatoes
- 1 tsp. chili powder
- 1/2 Tbsp. garam masala
- 1/2 Tbsp. ground coriander
- 1/2 Tbsp. ground cumin
- 1/2 Tbsp. sugar
- vegetable oil
- cream (liquid)
- coriander (a few sprigs of ,to serve.)
- ground almonds (to serve.)
Directions
- Boil the potatoes in plenty of salted water until soft. Let cool and blend into a puree.
- Add the rest of the ingredients except the flour, eggs and oil. Mix very well until all the ingredients are integrated with the mashed potatoes.
- Form balls with the dough the size of a plum. They come undone easily, careful !!. Pass each ball through the flour, then through the beaten egg and finally through the breadcrumbs. Store in the refrigerator.
