- 1/2 sweet onion (chopped)
- 2 Tbsp. butter

- 2 cups shredded cheddar cheese (OR 12 slices of cheddar cheese)
- 12 flour tortillas (homemade or quality store-bought- I like Stacy's Tortillas sold at many health food stores.)
