Great idea for a make ahead breakfast ... Good for just a few or for a crowd. I basically followed the recipe as stated, but I did add one sautéed yellow onion, 1/2 cup medium salsa and stirred the 1 cup shredded mild cheddar into the egg mixture. Then I built the burritos topping with just a bit more shredded cheese.
The next morning it was so nice for my 3 teens to just be able to grab a delicious hearty breakfast on the go. Made the morning less hectic. They loved them! ... And hey, I got the next three mornings covered! What's not to love about this recipe?!

Awesome starter recipe that can be used as a platform to add more things you like- onions, peppers, tomatoes, etc.
Super yummy and easy to make! Husband loves them for his daily breakfast routine!

Added one onion, red bell pepper and diced tomatoes. Still a bit on the bland side but makes a nice huge batch of burritos for easy reheating.
