Ingredients

- 1 pinch salt
- 1 egg white
- 15 grams white sugar
- 1 pinch fine sea salt
- 65 grams icing sugar
- 37 grams hazelnut (or pistachio flour, see point 2 & 3 above – the bits that made it through the sieve!)
- 50 grams bittersweet chocolate (at least 70%, or this will be far too sweet)
- 30 grams unsalted butter
- 20 mL cream
- 1 honey (heaping Tbspn stiff, I used J Friend & Co Kamahi honey)
- 40 grams unsalted butter (cubed and softened, you should be able to push a cube without much pressure and it’ll give in)
- 1 tsp. pomegranate molasses (*, google pomegranate molasses and your country name to find this)
- 40 grams honey (I used J Friend & Co Pohutukawa honey)
- 1 Tbsp. hot water (optional, makes a softer, lighter buttercream)
