- 1 red onion (medium-sized, sliced in half moons)
- 3 garlic cloves (finely chopped)
- 840 grams Roma tomatoes (diced)
- 12 grape tomatoes
- 3 green chillies (you can use mild ones if preferred or a pinch of chili flakes)
- 5 sprigs fresh thyme
- 10 fresh parsley (springs, finely chopped)
