- 1 sweet potatoes (medium, microwaved or baked until soft, about 1 1/2 cups)
- 2 cups milk (I used 2%)
- 3/4 cup pasta water (reserved)
- 3/4 cup plain greek yogurt
- 1 tsp. salt
- 1/4 tsp. black pepper
- 4 cups grated cheese (I use colby-jack)
- 3/4 cup whole wheat bread crumbs (Panko crumbs work well)
- 2 tsp. avocado oil
- 1 Tbsp. fresh parsley (optional)
- 1 tsp. dried parsley (optional)
