Usually, it is Macaroni & Cheese, but this time I'm changing the game a bit, starting by using a longer shape pasta.

This recipe feeds 4 really hungry people or 6 to 8 kids. Or simply a very cheesy person! ;)

Spoil Alert: I used a lot of different cheeses. (TB) is Turkey bacon and just because I wanted a bit of green some arugula. This is not any type of mac & cheese. THIS IS SPECIAL!…

  • 300 grams macaroni (uncooked)
  • 1 whole egg (beaten, ready to be surprised?)
  • 1/4 cup unsalted butter (1/2 stick Or 4 tablespoons)
  • 1/4 cup flour (All-purpose)
  • 2 1/2 cups whole milk
  • 2 teaspoons ground mustard (powdered)
  • 100 grams colby cheese (grated)
  • 100 grams monterey jack (grated)
  • 100 grams mild cheddar (grated)
  • 1 cup grated Parmesan
  • 6 slices turkey bacon (cooked and chopped)
  • 3 cups arugula
  • 1/2 teaspoon salt (just to taste.)
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon thyme

    Directions

    1. Cook pasta until very firm. As a matter fact if it is undercooked is ready to be drained. Remember that is going to cook a bit more during the process. So 3 to 4 minutes in the boiling salted water should be good to go.
    2. In a small bowl, beat an egg. Keep it close, you'll be using it shortly. Promise!
    3. In a large pot, melt butter and sprinkle in the flour. Whisk together over medium-low heat. Cook mixture for 5 minutes, whisking constantly. Don't leave it to go check your Facebook quick and don’t let it burn.
