A little bit work-intensive and time-consuming for a weekday dinner, but the flavours were so fantastic. I added about half a tbsp each of dried rosemary, thyme, parsley, and oregano, as well as a good sprinkle of paprika and garlic powder at the end. Overall, really balanced, earthy, and satisfying. I also really loved the addition of kale in the mashed potatoes - I almost think the dish would be a bit too heavy without them. Initially the gravy seemed way too runny, but it seemed to set better as it cooled.
