- 1 lb. rice noodles (dried thin, / bee hoon, soak in cold water for 20 minutes and drain)
- 3 Tbsp. oil (divided)
- 8 oz. large shrimp (peeled and deveined)
- 1 cup bean sprouts
- 15 stalks chives (cut into 2-inch strips)
- 1 lime
- salt (to taste)
- 1 onion (medium size, peeled)
- 5 cloves garlic (peeled)
- 1/2 cup peanuts (chopped)
- 1 cup beans (ground fermented, / tau cheo)
- 2 cups water
- 1 stalk lemon grass
- 7 oz. dried red chili (soaked in water until soft and ground to paste with a bit of water)
- 4 Tbsp. tamarind (mix with ½ cup of warm water to extract the juice)
