- 2 shallots (banana, peeled and finely chopped)

- 60 grams plain flour
- 1 pt. milk (I used skimmed)
- 2 tsp. Dijon mustard
- 1/2 tsp. cayenne pepper
- 70 grams cheese (guyere, grated)
- 70 grams cheddar cheese (grated)
- 50 Parmesan cheese (grated)
- 1 roll (rustic, or 2 slices of stale bread)
- 1 bunch tarragon leaves (roughly chopped)
- 1 Tbsp. truffle oil
- 3 Tbsp. Parmesan cheese (grated)
- 1 pinch salt
- oil (for frying)
