- 1 1/2 lb. shrimp (21/30, peeled, de-veined and minced, cut lengthwise, then cross-wise, thin)
- 1/2 cup yellow onion (minced)
- 1/2 cup Chinese celery (or the heart of regular celery, cut into thin lengths then finely minced)
- 1/2 cup carrot (minced)
- 7 Tbsp. soy sauce (I like Silver Swan brand soy sauce in this)
- 1 large egg
- 1/2 tsp. kosher salt (to taste)
- freshly ground black pepper (to taste)
- 125 squares spring roll wrappers (I like Spring Home wrappers from TYJ Food in Singapore; they come in 50 count packs)
- peanut oil (for frying)
- 4 Tbsp. rice vinegar
- 2 cups water
- 2 Tbsp. granulated sugar
- 2 Tbsp. ketchup (banana, Jufran brand, found in most Asian markets)
- 1 pinch salt
- 2 Tbsp. cornstarch (heaping)
