- 1 red onion (large, halved and sliced)
- 2 cloves garlic (crushed and chopped finely)
- 2 large carrots (sliced)
- 2 Tbsp. tomato paste
- 2 1/2 cups beef stock
- 1 sprig fresh thyme (or use a sprinkle of dried if you have not got fresh to hand)
- balsamic vinegar (a splash of)

- 1 Tbsp. tapioca starch (1.5 syns - *can substitute with cornstarch or arrowroot powder)
