- 2 garlic cloves (peeled, whole)
- 1 cup sliced leeks (finely, green parts only)
- 1/4 cup scallions (finely chopped, green parts only)
- 8 cups vegetable broth (Low FODMAP, homemade or purchased)
- 1 lb. red potato (scrubbed and cut into large bite-sized pieces)
- 2 medium carrot (peeled and cut into bite-sized pieces on the diagonal)
- 12 oz. plum tomatoes (cored and chopped)
- 6 oz. green beans (ends trimmed, cut into thirds)
- 1 medium zucchini (ends trimmed away, cut into quarters lengthwise, then cut into bit-sized chunks)
- 1 cup corn kernels (yellow, fresh off the cob)
- 1/2 fennel bulb (large, stalks and fronds discarded, cut into 1/2-inch, 12 mm wide slices)
- 2 oz. kale (tough stems removed, torn into large bite-sized pieces)
