  • 1 apple (small, about 100g, cored and sliced)
  • 1 teaspoon lemon juice
  • 50 grams long grain rice
  • 1 carrot (about 70g, peeled, halved lengthways and sliced)
  • 1/2 red pepper (deseeded and cut into strips)
  • 150 grams low-fat yogurt
  • 1/2 teaspoon curry powder (or according to taste)

    Directions

    1. Cook the rice in boiling salted water according to the package directions. Transfer rice to a bowl. Set aside to cool.
    2. Sprinkle the apple with the lemon juice to prevent browning. Toss the rice, apple, carrot and pepper in a serving bowl. Stir the curry powder into the yogurt and season with salt and black pepper. Drizzle the dressing over the salad.
