- 3 Tbsp. reduced salt soy sauce
- 1/4 cup water
- 2 Tbsp. rice wine vinegar
- 3 Tbsp. brown sugar
- 1 1/2 Tbsp. garlic-infused oil
- 2 tsp. ginger (crushed)
- 1/2 Tbsp. cornflour
- oil spray
- 500 grams skinless chicken breast fillets (fat trimmed, 2cm cubed)
- 2 tsp. sesame oil
- 2 medium carrots (cut in sticks)
- 2 courgettes (small, cut in sticks)
- 1/4 cup spring onion (finely chopped, green part only, plus extra for garnish, optional)
- 3 cups bok choy (chopped)
- 3 cups cooked brown rice (to serve)
- 3 black pepper (grinds)
