I couldn't find healthy large zucchini so my pan wasn't as full as I wanted but it was yummy and satisfied my zucchini craving. If I cook it again I will have to leave the zucchini in the oven a little longer to make them easier to roll.

Delicious. I made a half recipe of this along with a half recipe of baked Italian meatballs cooked in the same pan.

they were great. i had to cook them about an hour. i ran out of ricotta so i used both mascarpone and ricotta 2 eggs and some home made taziki and extra italian herbs. home made spagetti sauce. and my huge garden zuchini cut into wide ribbons. im going to freeze some for next ski season.
