Excellent recipe! Adding the coconut oil last and while it is warm made mixing everything together easy. I didn’t have coconut flour so I used Lupin flour instead. Texture was light and airy. Taste is harder to describe. You can taste the egg but it’s still subtle like the other flavors. It’s just a well balanced flavored waffle that is quite filling. I used only 1 tablespoon of honey and it was perfect (I normally add a bunch of butter and syrup). Next go-around I will try adding some cinnamon to the batter. Highly recommend giving this a try!

I liked it. It was a bit sticky to put into to waffle iron. I put too much batter for my first two, and I had quite a bit of extra dough spilling out. I was surprised that they tasted so good without sweetener added.

I subbed cottage cheese for ricotta and they are amazing!!! They are fluffy yet light and very filling. Will be making these again!
