- 20 mL extra-virgin olive oil (EVOO)

- paprika
- freshly ground black pepper (to taste)
- broth (sprinkle of organic, granules)
- 2 eggs
- 250 grams ricotta
- 100 grams mozzarella
- 50 grams double cream
- 75 grams freshly grated Parmesan (I use Parmigiano Reggiano as it has a more intense flavour)

I made a couple of changes because I like tomato with my 'canneloni' so I added a 400g tin of crushed tomatoes to the bottom on the pan and poured the ricotta spinach mix on top and then gently forked the mix. It was super delicious.
