I had great results with this recipe, I chose to omit the salt and use homemade baking powder. My roommates and I have all been trying out keto, and some were skeptical that an easy, tasty, well textured, and not eggy keto bread existed, until now. The entire house rejoiced, hooray for sandwiches! Also, I dont have store bought egg whites, so I used the leftover yolk to make mayo with light olive oil. An immersion blender works great to foam the egg whites and combine the other ingredients, as well as to make the mayo. I also tried the recipe in a small water glass to utilize the shape and made a bun for a bratwust, it held up well and didnt soak through, which impressed me. Considering the load of sauerkraut, fermented jalapenos, and mustard on the bun.

I will begin with this; I am not afraid of salt, using it to enhance flavors, eating it and tasting the natural flavors of that food-enhanced, however this bread is incredibly salty. I can feel my blood rising after eating one serving of the four it makes. Seriously leave the 1/4 tsp of salt out of the recipe and it'll be edible. The other ingredients add enough salt (maybe even more than enough) to complete the recipe. I will try it one more time not using salt and see how it goes. As for the overall outcome, the bread was moist, dense but still chewable, and had a nice texture to it. These will be small bread rounds and when sliced to four servings, they will be thin.
