- 12 oz. chorizo sausage (browned and sliced, While I used hot sausage to get to 12 ounces, feel free to mix it up and use what ever type of sausage you like; just be sure to cook it ahead of time.)
- 12 large eggs
- 6 oz. button mushroom (raw and sliced, about 2 cups, use any type of mushroom you’d like)
- 1 red pepper (medium, seeded and diced)
- 4 scallions (large, diced, use green and white parts)
- 2 cups shredded cheddar cheese (divided, feel free to use a different cheese if you prefer)
- 6 dashes hot sauce (optional)
- 1 tsp. fine sea salt
- 1/2 tsp. black pepper
