- 1/2 cup spinach
- 10 oz. frozen green beans (or fresh)

- 5 cups stock (or broth, I like vegetable or chicken Better Than Boullion - but watch the saltiness)
- 1 Tbsp. olive oil

My low-carb rainbow vegetable soup turned out pretty good for a soup with no grain. Next time I think I'm going to add beans to make it a little more heartier. Overall, the spices worked well together and the cinnamon gave a nice flavor to the soup.
