- 3/4 cup monk fruit (granulated sweetener)
- 4 Tbsp. ground cinnamon (or less if you're not that fond of cinnamon)
- 10 eggs (beaten well)
- 5 Tbsp. coconut oil (melted, or use melted butter or another type of oil if you prefer)
- 1 Tbsp. vanilla (I used Mexican vanilla)

Great breakfast muffin, not too sweet. It is quite dense too, and make sure to warm before eating as it becomes quite hard due to the density. I added craisins, which gave it a bit of a tart addition.
