Making this for the second time today. One of my new favorite recipes. I'm pregnant and have gestational diabetes so I was looking for a low carb quiche and this is perfect and super flexible. You can switch up the meats, cheese, and broccoli for endless other combos. We plan to make several ahead quiches of time and freeze in pieces for when baby comes and reheat slices in our airfryer for easy breakfasts after sleepless nights.

Made this today for the first time. Easy to make with lots of options to customize (I didn’t include the onions just for personal preference). It turned out beautifully. Even without any seasonings, it was full of flavor. This will be part of my regular breakfast line-up.

I omitted the onion and mixed everything together in one bowl instead of separately. It was great!
