- 15 oz. enchilada sauce (Green Chile, simmered to reduce to 2 cups, I used Hatch Green Chile Enchilada Sauce. Check the carb count on the brand you find if that’s important to you.)
- 4 boneless, skinless chicken breasts
- 2 cups chicken stock (or canned chicken broth + a little water, for simmering chicken)
- 1 tsp. poultry seasoning (for simmering chicken)
- 4 oz. cream cheese (softened, You can use light cream cheese, but it has more carbs.)
- 1/2 cup sour cream (You can use light sour cream but it has more carbs.)
- 1 1/2 cups grated cheese (Four Cheese Mexican Blend)
- 1/2 cup low-fat mozzarella cheese (grated)
- 8 whole wheat flour tortillas (burrito-size low-carb, I used Mission Carb Balance Whole Wheat Tortillas which have 6 carbs each)

Turned out great. I tweaked it alittle by adding roasted jalapeno's to the sauce. Gave it just enough heat for us. Will definitely make again.

Suprisingly good. I made it on a Friday work/school night so I was a little tired but probably better for a Saturday meal if you work late like I do.

I used tortilla chips instead of tortillas and it turned out great and sit easier.I will definitely make it again.and real soon.
