Was looking for diebetic-friendly recipes for my mother and found this. It was amazing! Didn’t put the tomatoes in it, and used smaller strips of chicken instead of whole breasts. Turned out amazing! The Balsamic Vinegar was optional, but I strongly recommend it- feels like it would be missing something without it. Also didn’t put feta on the vegetables, but they didn’t need it. Because the recipe didn’t specify, I heated my oven to 375°F and baked for 40 minutes.
Great meal, will be making it again!
