I’m not going to lie to you, I’ve been having a love affair with anything cinnamon flavored lately. I just can’t seem to get enough of it. For a long time I couldn’t get my cinnamon rolls out of my head but was out of almond flour for months. Then for Christmas I got 4 pounds of almond flour and couldn’t even decide what to make first. After a bunch of research I decided to make cinnamon pecan scones. Oh and am I so glad that I did! These were fantastic! I loved the crunchy texture and the flavor. The dough was super easy to make and work with and these were done in less than half an hour total…
If you are a cinnamon lover like I am, I highly suggest making these. They are excellent.
Ingredients
- 2 cups almond flour
- 2 Tbsp. stevia (granulated)
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. canela
- 1 large egg
- 1/4 cup butter (softened)
- 2 Tbsp. almond milk
- 1/2 tsp. vanilla extract
- 8 drops liquid stevia (or to taste)
- 1/4 cup dried cranberries
- 3 Tbsp. stevia (granulated, topping)
- 2 tsp. canela
- 1/4 cup pecans (chopped)
Directions
- Cinnamon Pecan Scones Pre heat your oven to 350 degrees Farenheit. Spray a baking sheet with non-stick spray and lay a sheet of parchment paper over your baking sheet. Spray your parchment paper with non-stick spray.
- Gather all of your ingredients. Mix all the dry together with a whisk. In a separate bowl, mix all your wet ingredients. Add your dry ingredients to your wet ingredients and mix until all of your ingredients are incorporated.
- Place your dough on your prepared cookie sheet and using a rubber spatula, spread into an even circle (or as even as you can get it). Make sure that the thickness is pretty much the same all the way through.
- Add your topping mixture on top of your dough and lightly pat it in.
- Bake for 12-15 minutes. It should be lightly golden brown. Let cool for 10 minutes and slice as desired (I sliced mine into 8 triangles).
