Didn’t have enough zucchini or carrots, so matchstick cut what I had and tossed with half a bag of riced cauliflower. Used leftover diced chicken, added some diced red onion, mint, and used monk fruit sweetener instead of honey. Turned out great as a “rice stir fry”! Will make again.
