I really love this recipe although I use regular, whole milk and it was delicious! It worked well as a white pizza sauce, and because my husband doesn't care for Parmesan cheese, this was a wonderful alternative. I would caution to grate your own mozzarella as it will make the sauce smoother. Pre-grated cheeses do not melt as smoothly. The author did note this in the instructions. Also, be careful to melt butter and cream cheese together on low heat or it will curdle as mine did! I would bet if my cream cheese was at room temperature it would not have curdled but I put it in the food processor for a few seconds and no problem! I put a TINY splash of Chardonnay in it which gave the sauce a bit of a fondue sauce flavor. Excellent sauce idea for so many recipes.
