  • 2 cloves garlic (minced, 1.5 tablespoon minced garlic)
  • 1 cup diced red onion
  • 1 pound chicken breast (cut into chunks)
  • 8 ounces smoked turkey sausage (cut into chunks)
  • 8 ounces shrimp (jumbo raw, peeled, deveined)
  • 1 green bell pepper (diced)
  • 1 stalk celery (diced)
  • 1 cup cherry tomatoes (sliced in quarters, about 8-10 tomatoes)
  • 8 ounces tomato sauce (no salt if available)
  • 3 tablespoons tomato paste
  • 1 1/2 cups low sodium chicken broth
  • 2 bay leaves
  • 2 cups cauliflower rice (you can purchase this already made or make your own – see my note below)

    This was fabulous... I did adjust the recipe a bit added only 1/2 tsp of Cayenne as my boyfriend and our 7yr old don’t do super spicy stuff.. I also should of cut back the chicken broth a tad as I’ve never made cauliflower rice and it guess I didn’t dry it out enough 1st so it was a tad soupy.. I fixed this by just adding a few mins to the boiling time and it thickened a bit more... over all great recipe family loved it will definitely make again!
