- 1/2 qt. crab (store-bought or homemade, or shellfish stock)
- 1 bay leaf (optional)
- 1 tarragon sprig (optional)
- 3 tsp. juice (onion)
- 1/2 tsp. mace
- 1/2 tsp. lemon zest (microplaned)
- 1 tsp. bbq sauce (freshly-ground South Carolina mustard, very optional TFD addition - replace with ½ tsp. freshly-ground white pepper for authenticity)
- 1/2 tsp. Old Bay Seasoning (TFD addition, leave out for authenticity)
- 1/2 tsp. Worcestershire sauce
- stock
- 1 tsp. cornstarch
- 2 cups crab meat (white, ½ cup cooked and reserved)
- 1 lb. roe
- 1 cup egg yolk
- 1/2 tsp. kosher salt
- 1 cup fino sherry (warmed)
- paprika (optional)
- minced fresh parsley (optional)
