  • 1 red bell pepper (seeded and cut into 24 1 inch wedges)
  • 1 cucumber (seeded and cut into 24 1 inch wedges)
  • 4 whole wheat bagels (thin)
  • 4 tablespoons light italian dressing
  • 8 slices provolone cheese
  • 8 slices roast beef

    Directions

    1. Cut the middles from the cheese slices, and cut 4 small circles of cheese and 4 even smaller circles of cucumber.
    2. Cut the bagels in half horizontally and spread the cut sides with dressing. Layer the bottom halves of the bagels with 1 slice of cheese, 2 slices of beef and another slice of cheese. Put on the top half of the bagels and lightly coat both sides with olive oil cooking spray. On a preheated grill pan, grill each side for 2 mins, pressing down with a spatula. Cut the bagels in half and arrange the pepper and cucumber wedges in an alternating pattern radiating out from the filling. Arrange the bagel sections on plates to resemble the Loch Ness Monster. Lightly brush a little of the dressing onto the head sections and stick on the a circle of cheese and a circle of cucumber for the eyes. Serve immediately.
