- 3 stalks celery (coarsely chopped)

- 2 leeks (white and light green parts only)
- 3 sprigs lemon thyme (fresh, or regular thyme)
- 1 bay leaf
- 2 Tbsp. tomato paste
- 1/4 cup brandy
- 1/4 cup all purpose flour
- 4 cups heavy cream
- kosher salt
- freshly ground black pepper
- chopped fresh chives (Finely, for garnish, optional)
- oyster crackers (Old Bay)
