Great as a side definently not a main meal. Made it as a lunch prep and it was just not enough for serving size.

Great recipe! I had a half head of cauliflower to use so I riced it in the food processor and pan fried it with a half tbsp of grapeseed oil. Then added remaining toppings. Delicious! And, a great way to use up leftover cauliflower.
