    I made this recipe today and it turned out really well, very tasty. The one thing I did different was I removed about a third of the potatoes when it was cooked, used an emulsifier to mix the remaining potatoes to create a more uniform consistency, and returned the remaining potatoes. This makes the soup rich and creamy and no need for any thickener such as flour. I also used hot paprika, which gives the soup a little more “kick” especially in the winter.

    The potato soup was delicious. Though I did modify it by grating the potatoes into hashbrown shreddings. Otherwise it came out great!
