- 1/2 cup cornmeal (whole grain, use fine or medium grind)
- 1/2 tsp. kosher salt
- 1/3 cup buttermilk lowfat (cold, is fine, plus extra as needed)
- 2 Tbsp. raw honey
- 1 Tbsp. olive oil
- 2 leeks (large, thinly sliced, whites and light green parts only)
- 3 oz. prosciutto (sliced into small dice)
- 2 oz. goat cheese (crumbled)
- 1 zucchini (small, thinly sliced into half moons)
- 1 yellow summer squash (small, thinly sliced into half moons)
- 1 handful heirloom cherry tomatoes (a dozen or so, slice the larger tomatoes into thirds, smaller in half)
- 1 Tbsp. minced fresh basil
- 1 Tbsp. fresh cilantro (minced)
- 1 Tbsp. fresh dill (minced)
