Turned out sooo good! I amended this a bit to suit my taste buds:
Used chicken sausage but didn't like it toooo much. Might use minced chicken meat or even shitake mushrooms instead - the next time around.
Used a whole box of baby spinach, 6 cloves of garlic, 2 chopped shallots, regular milk (cos I didn't have almond) and used 6 eggs instead of 8 - because I wanted more veges and less of the eggs. I also added in chili flakes (for a spicy kick).
I also added in a bit of mozzarella on top of the meat/spinach/bell pepper mix before pouring in the egg mixture. (DELISH!)
I had to use Ramekins instead of a muffin pan cos mine got damaged and I hadn't bought new ones. And if you use ramekins DO NOT fill it to the brim, about 3/4 of the way up is good because I think it cooks differently. I also had to cook it for a full 25 - 30 mins before I felt it looked cooked. Made 6 Ramekins of frittatas.
Okay I know this sounds like I didn't follow the recipe much - but everything else I did to the tee - and it turned out perfect! I'll be adding in other ingredients and experimenting now that I have this recipe. It is the PERFECT to-go breakfast!

Fabulous base idea, I used whatever Leftover roast vegetables added sundries tomatoes & topped with salami 😋
