I learned how to steam cauliflower, and also that you need it to be completely tender when you take it out. I didn't let the cauliflower steam completely, and I also doubled the recipe, so I had to leave it in the oven until it was properly cooked. Very good, will be making again.

This is by far, the BEST cauliflower dish I have ever tasted. I usually roast my cauliflower, this is quicker and OH SO yummly!...... One tip... I use hot BK hot pepper seasoning...

Will make it again!!! Winner for my husband. Maybe a chili baked potato dish would work, too...? We had some turkey kielbasa leftover and used that with 4 strips of bacon. Steamed 2 heads of cauliflower. Cooked some onions with bacon (removed from pan, cleared out grease, then put back in to finish and added chopped kielbasa pieces to warm.) Also added some uncooked chopped onion when mixing all in the casserole pan. Prob 1 - 1..5 cups of sour cream was stirred into the "potato layer" and about two ounces of sharp cheddar cheese. Also added garlic salt. (Went a little to heavy with the garlic salt, when added to the bacon and kielbasa it was a bit salty. Will need to add some more steam cauliflower to even out.) Took more time that what was noted, I'd say an hour if your coring and cutting/steaming your own cauliflower. All was warm when mixed for casserole pan, so just broiled it on top until cheese was melted. About 10-15 min.

It was delicious I roasted the cauliflower with bacon fat for 15 mins and had some asparagus added to the cauliflower will definitely make again!
