Wow - we really enjoyed this dish! I was pretty generous with the taco seasoning and added avocado, but otherwise followed the recipe. Really hoping leftovers are just as tasty ;)

This is a simple and versatile recipe. I used mozzarella and a little bit of blue cheese and added sliced sweet peppers and red onion.

used mozzarella instead because I didn't have the recommended ones, sprinkled it in 10-15 min before the end of the cook time. added avocado too, just to add a bit more oomph to it. so good!
